  We have quite an assortment of cheeses now!  Almost all are imported which means they don't have the rBGH Bovine Growth Hormone and most are from grass-fed cows which adds to their flavor and nutritional value.  The vast majority of the cheeses are even organic, which is hard to find for exotic cheese!  
  Barat is a firm cheese made in small wheels that creates a nutty taste. Made from grass-fed cow’s milk and using vegetarian rennet, this cheese is drier and cheddar-like in texture.  Sprout Creek Farm is a 200 acre working farm in Dutchess County, New York.  They make their cheese from the rich and creamy milk of their herd of grass-fed Jersey, Guernsey, Milking Shorthorn and Brown Swiss cows, free from artificial hormones and antibiotics. Their artisanal cheeses are made in the age-old tradition of European farmstead cheese using a method that merely enhances the innate qualities of the milk.  One of our favorites is BaratSharp and firm, Barat is excellent with white wines, light ales, mead and cider. 
 
 
  Flor di Capra is an artisanal, semi-soft organic goat cheese produced in Sardinia, Flor di Capra, and is one of only a few goat cheeses produced in Italy. Sardinia is generally known for it’s sheep’s milk cheeses, but the rugged land is also suitable for goats. Sardinia is a windswept, practically treeless, rocky, mountainous landscape. Goats are perfectly adapted for this type of habitat, they are sure-footed, able to climb steep cliffs to find food and can survive on tree bark and thorny scrub. They complement sheep because they prefer grass. Flor di Capra is very creamy with a terrific balance and is flavorful without being very “goaty”. It is a high quality cheese made in small batches on mountain pastures using traditional techniques. 
 
 
Il Villaggio® MozzarellaIL VILLAGGIO® FRESH MOZZARELLA comes in water and is delicious!  Cook with it and melt it over veggies, chicken or a crusty loaf of bread.  Use it in your eggplant parm or chicken parmesan.  Pair it with fresh basil and delicious olive oil for a salad or with a nice piece of crusty bread for a delicious sandwich - add a shake or salt, fresh ground pepper and maybe even a little balsamic too.

 

Don't forget the:
 

  BASIL is wonderful fresh and the dry is no comparison.  Used often in Italian cuisine, Basil can be eaten fresh and can be cooked, as in in sauces and soups.   It has a wonderful fragrance.  Try a tomato, basil and fresh mozzarella salad with a little olive oil, salt and fresh cracked black pepper.  Basil pesto made with a big handful of basil, olive oil and pine nuts is delicious in pasta.

  Broccoli truly is a wonder vegetable.  Only 25 calories and broccoli is high in vitamin A, and is a good source of folic acid (especially important for pregnant women), calcium, potassium, vitamin C and beta-carotene (an antioxidant).  It is packed with antioxidants. It also contains the phytochemical sulforaphane, a natural chemical that stimulates the body to produce enzymes which destroy carcinogens, and therefore which can help reduce the risk of cancer.  Johns Hopkins University study showed that Broccoli is more effective than antibiotics for peptic ulcers and stomach cancer.  This is a cruciferous vegetable.
 
 
 
Broccoli Sprouts may even be more nutritious than Broccoli, which is highly nutritious and is known to decrease many kinds of cancer.  Broccoli Sprouts are great at cutting high blood pressure, cardiovascular disease and stroke.  Sprouts are high in glucoraphanin which works to boost the powerful antioxidant defense system in our bodies.  The latest study showed that broccoli sprouts strengthen the immune system, strengthen the antioxidant system, and decrease inflammation and blood pressure.  They improve our cardiovascular health.  They have a nice bite to them which is great in sandwiches or salads, but I personally don't like them juiced, and you know you're doing something SOOOO good for you!
 

 

Savoy Spinach is curly leaf spinach with a wonderful almost nutty undertone.  Can be eaten raw as in a salad or cooked just a bit.  Spinach actually has more nutritional value once cooked.  Wash well, as with all spinach, but dry well before sautéing.  The stems have the sugar so don't trim them too much and cook in very little water and you'll be rewarded with the most delicious spinach ever!

We had such a great response from the delicious Ginger Gold, we're getting them again!  The Ginger Gold is crisp, tangy, sweet, and juicy and a favorite among apple aficionados.  Quite attractive mix of green and yellow with a red blush.  It stays white and crisp once cut so make s a nice snack, is great on your cheese platter, perfect in a salad, or bake or cook with it.  Limited availability (August - October) so get them while you can!

Originally from Virginia and may be a cross of a Golden Delicious and a Pippin.  It was found in an orchard among twisted uprooted apple trees in the foothills of the Blue Ridge Mountains.

  Tahini, most often made from roasted sesame seeds, ours is made from raw sesame seeds which have been mechanically hulled. Fine on bread, rolls, and bagels. Put a tablespoon in a blender, add water, a dash of honey and lemon juice and you have a delightful salad dressing. Mix tahini with our Living Vermont Honey you have the makings of halavah, a Middle Eastern delight! Kosher certified.

Or try one of the other Living Tree Nut Butters!

Add Tahini it to chickpeas in the food processor with really good olive oil (see next item), fresh squeezed lemon juice, and garlic to make chumus.  (I like including parsley too!)
