She shares some recipes with us:

Apple Pie with Almond Cream Crust
2 cups soaked, dehydrated almonds
1/2 cup soaked, dehydrated sunflower seeds
1/2 cup soaked, dehydrated pumpkin seeds
1 cup buckwheaties (sprouted, dehydrated buckwheat)
1/2 cup pitted dates
1/8 tsp salt
pinch of ginger (grated)
1 tsp lemon zest
3 tbsp coconut oil
Put nuts, seeds, and buckwheaties into a food processor and grind into a meal. Add dates, salt, ginger, lemon zest and coconut oil. Process until crust begins to collect at the edges of food processor and begins to fall forward. Pat, press and form crust mixture into pie plate
Filling
1 cup soft, pitted dates
1 tsp lemon zest
1 tsp cinnamon
1/8 tsp cardamom
1/4 tsp nutmeg
8 apples
1/2 cup raisins

Shred 4 apples & peeling. Peel and slice 4 apples. Puree dates, spices, raisins and shredded apples into a paste. Mix paste mixture with sliced apples. Arrange apple mixture into crust
Almond Cream topping
1/2 cup soaked, peeled almonds
1/4 cup water
1 tsp vanilla
2 tbsp agave
3 tbsp coconut oil
Blend all ingredients. Spoon almond cream onto apple filling.


Breakfast Crispies
2 cups of soaked organic buckwheat groats (for at least 2 hours)
1/2 organic vanilla bean (chop finely)
1/2 - 1 cup of organic maple syrup or organic agave nectar
1 teaspoon organic cinnamon
Dash of stevia in powder (Optional)
1 teaspoon of almond extract

Rinse buckwheat groats and discard soaking water. Blend all ingredients on food processor.
Spread thinly over teflex sheets (or unbleached parchment paper) of your dehydrator trays.
Dehydrate over night.  Once dry, crumble roughly.  Enjoy a bowl of your raw vegan
buckwheat crispies with organic almond milk and top with fresh berries, bananas or
chunks of peaches and may be add some raw cacao nibs.  Yum!


Tips about buckwheat groats:
Substitute cracked wheat for sprouted buckwheat groats for your favorite tabbouleh recipe
Use sprouted & dehydrated buckwheat groats as a crunchy topping for your salads, desserts,etc.
