These beautiful cold-smoked lox filets are great for entertaining. They're pre-sliced, vacuum sealed and freezer-friendly. Fillets average a minimum of 26 oz and yield approximately 3-4 dozen slices each. Keep extras on hand for impromptu gatherings. (May be quick-thawed in 30 minutes.)

What is the difference between sockeye, king and silver salmon?

They are each delicious in their own way.  It is a personal preference and I encourage you to try each kind to determine which you like best.  Personally, I like each of them for variety.  The King Salmon is extraordinary.  The White King is just as delicious and quite spectacular at fooling guests (especially those who say they don't like salmon!), the sockeye, particularly the 1/2 fish filet, is wonderful for company and presentation and has a great flavor (even the canned sockeye is a favorite around here) and the Silver is loaded with flavor and has a wonderful color and was always the one I bought most of the time.  All of the salmon is 100% natural, sustainably harvested and pure. They differ somewhat by color, oil content and texture. The differences listed below are generalizations and may vary by region of origin. For instance, sockeye salmon bound for a small river requiring a short migration will be lower in oil content than those headed for a large one. Some king salmon may be comparable in color to sockeye salmon or less red than silver, etc.

How much of the omega-3s are in the fatty gray meat beneath the skin?

According to Dr. Mary Enig, a world famous expert on fats, as much as two-thirds of the omega-3s in fish reside in the gray fatty layer beneath the skin. However it is interesting to note that tests conducted by the USDA Nutrient Data Laboratory indicate that the flesh of sockeye salmon (for example) contain more than 1.2 grams of EPA and DHA per 3.5 oz (98 g) serving. This exceeds the 650 to 1000 mg recommended daily intake of omega-3s by more than 20%. So whether the gray fat is consumed or not, one is assured of getting a significant 'dosage' of EPA, DHA (and many other essential fatty acids) with each serving.

"I'm a big fan of blueberries -- they're delicious, and they're also very good for you. Blueberries contain anthocyanins (the pigments that make them blue), which are responsible for their antioxidant potency -- a half cup of blueberries packs as much antioxidant power as five servings of peas, carrots, apples, squash, or broccoli.

Most recently, the U.S. Department of Agriculture and the National Institute on Aging released their findings from a preliminary study on the anti-aging effects of blueberries. Researchers tested four groups of elderly rats on balance, coordination, and memory. Prior to the testing, the rats were given a diet spiked with blueberry, strawberry, or spinach extracts, or nothing at all. In the end, the blueberry rats outperformed the other rats in balance and coordination; and blueberries and strawberries seemed to offer the most protection against oxidative stress in the brain. Researchers are now attempting to learn how long these changes last -- and whether these findings hold true in humans.

My guess is that they will: Last year, scientists at the Jean Mayer USDA Human Nutrition Center on Aging at Tufts University, compared 40 different types of fruits and vegetables in an antioxidant contest -- and blueberries took first place. Even if they don't turn out to be the fountain of youth, they are a healthy carbohydrate and a good source of vitamin C and fiber (two grams per one-half cup serving). They also contain:

  • Ellagic acid, a natural compound that has effectively inhibited tumor growth in laboratory mice.
  • Like cranberries, blueberries contain a substance that can help prevent urinary tract infections by inhibiting the adherence of bacteria on the bladder wall.
  • The anthocyanins in blueberries may reduce eyestrain and improve night vision. An upcoming study at the USDA Human Nutrition Center on Aging at Tufts University will examine whether blueberries can help prevent macular degeneration, a leading cause of blindness in people over age 65.
