Elysian

Avocados are full of
nutrients and fiber. The
average avocado has
approximately 12 grams of
carbohydrates, which is 1/3
that of an apple. They are
also known for their high

Avocado consumption has been
found to help the body
combat other major diseases
including diabetes,
cancerous tumors and

avocados to have very high
levels of monounsaturated

Avocados have also been

of the natural plant
compound beta-sitosterol, a

Zealand's Bay of Plenty
region provide the highest
levels of beta-sitosterol in
the world for oil extracted
from the avocado. Avocados
grown elsewhere typically
average 750mg per 100g
content versus 950mg per
100g content for Bay of
Plenty fruit. When comparing
these levels against olive
oil, long recognized as a
superior oil in terms of
health, New Zealand grown
avocados more than triple
the beta-sitosterol levels
of the very best olive oils.
Beta-sitosterol has an
apparent ability to block
the 'bad' LDL cholesterol
absorption from the
intestine, resulting in
lower blood cholesterol
levels. In addition, avocado
oil is highly recommended
for its high level of heart
healthy monounsaturated fat,
predominantly Oleic Acid,
which accounts for more than
70% of each 100g. By using
avocado oil on a regular
basis in conjunction with a
healthy diet, you can help

Skin Care
Because

soluble collagen in the
dermis, retarding visible

in California indicates that
avocados have the highest
Vitamin E content compared
to kiwifruit, nectarines,
grapes, and peaches. Vitamin
E is known to be powerful
antioxidant 'mopping up'
free radicals and helping to
decelerate the signs of
ageing, therefore avocado

antioxidant.4
The multiple properties of
avocado oil as a base
product, properties such as
emoliency, penetration,
stability, skin softening
and moisturizing, allow for

ingredients can be
eliminated from the

As a massage, skin or facial
oil it helps protect skin
from drying and improves

levels of unsaponifiables -

unsaponifiables are mainly
composed of sterols,
essentially Beta-sitosterol,
campestral, avenasterol and
hydrocarbons which include
squalene and alcohols].
Because of the high levels
of essential fatty acids it
has excellent restructuring
powers to keep the skin
moisturized.
Skin care products use the
natural ability of avocado
oil to regenerate connective
skin tissue and to inhibit
bacterial growth.
Avocado oil is an excellent
base for ointments used for
treating lacerations,
dermatitis, acne and similar
skin conditions. Also for
post-operative dressings to
prevent adhesions to wounds
and skin burns whilst
accelerating the actual
healing process.
Avocado oil is an ingredient
in upmarket skin care
cosmetics and creams,
highest quality soaps and
shampoos, products for
damaged hair, baby hair and
sun products. It's also a
good hair stimulant.
All
these products can be
formulated using natural
ingredients that are
hypo-allergenic and contain
no sensitizers. This ensures
safe use by all skin types
under any climatic
conditions.
Strong UV absorption
properties, make it an ideal
supplement to enhance the
activity of UV-A and UV-B
absorbers. This reduces
synthetic sunscreen
concentration, lessens
irritation among some
people, and enhances the
desirability of the product.
Among eight plant oils
tested and studied for their
effectiveness as sunscreens,
(including Sweet almond oil,
Sesame oil, Persic oil,
Safflower oil, Peanut oil,
Jojoba oil, Coconut oil,
Olive oil) avocado oil
proved the most effective
sunscreen.5
Avocado oil is a high grade

Avocado oil is very safe to

The Oil Process
Elysian Isle, dedicated to
carrying the finest gourmet

small production facility
dedicated to producing the
finest avocado oil in the
world. The company was the
first to develop a method of
cold pressing premium
quality, natural, unrefined,
extra virgin avocado oil
that retains the health and
flavor qualities of
avocados.
Until now avocado oil
processing was commonly done
by a heating and chemical
extraction procedure. This
method created oil stripped
of many of the excellent
qualities found in avocados
and was not generally
suitable for culinary use.
Our first in the world
technology for cold pressing
only the Haas avocado allows
us to retain all of the
natural richness, flavor and
healthful properties of the
avocado.
From the beginning of the
oil extraction process we
ensure absolute quality
control. The pre-treatment
program is the most
extensive of any avocado oil
producer in the world. Any
damaged or imperfect fruit
are removed and the fruit
are washed, scrubbed,
skinned and pitted prior to
processing.
With only the flesh of the
fruit being processed the
average avocado provides
from 13 to 22% oil. This oil
is extracted at very low
temperatures (below 113
degrees F) without the use
of chemicals or exposure to
the negative effects of
oxygen or light. At no point
in the process is the
extracted oil subjected to
any industrial processes
that alter the original oil.
This includes refining,
bleaching, deodorizing,
coloring, hydrogenating or
the adding of any chemicals
of preservatives. This
ensures that you get only
100% pure, natural avocado
oil.

Olivico
Olive Oil

Olivico Organic Living Extra Virgin Olive Oil is "an essential natural
fruit juice extract", a must in every kitchen. Heat alters oil's fine
structure making it less desirable for our bodies. Olivico Olives are
manually harvested at the point of color changing in the fruit then they are
selected washed with pressurized cold clean water, passed through a dicer to
obtain an olive mush, which by gravitation is cold pressed. Once the
separation of the oil and the alperchin is done in 1000-liter decanters the
oil is naturally decanted as centrifugal processing creates heat. Filtered
or unfiltered this living oil has been created at temperatures below 70
degrees Fahrenheit by a unique process that preserves all of its beneficial
properties, rich flavor and heady aroma. Due to low temperature processing,
the fats in the oils tend to solidify at lower temperatures and may cause a

Candela Peru is a developmental organization located in the
Amazon region of Peru , pursuing the promotion of sustainable
development of its population and the conservation of the natural
rainforest.
Candela trades in the international and local markets, mainly in Amazon
(Brazil) nuts and the by-products (Amazon nut oil, Amazon nut pod candles)
of the nuts.
The Amazon nuts (Castanas) - known commercially as Brazil nuts, are the
seeds of one of the great canopy trees of the humid forest in the Amazon
region of the south of Peru . These nuts begin life at a height of 50
meters, where rare Eglousine bees - which feed on the flowers that grow in
this tree - pollinate them, which is the first stage in the development of
these fruits. Each summer, 1000 families come to the rainforest to harvest
these Amazon nuts. The main resulting products, asides from the raw nuts
themselves are nut oil, used in cosmetics and hair products and candles made
using the outer pods of the nuts
The core strategy for Candela is to develop as many high-quality products
and uses for the Amazon nut, in order to build a successful model of
sustainable development. For example, the shells of the nuts are used as
fuel to dry the nuts.
IN 2004, Candela has been registered as a FLO approved exporter of Amazon
nuts and its by-products - an important achievement for the organisation.
Commitment to the Producers
Since 1989, Candela has been working with individual producers providing
financial assistance, processing services, transportation and other
non-financial services. It supports individual producers and encourages them
to organise themselves in co-operative groups. In 2003, Candela developed a
partnership agreement with SERRV International, an FTO from the USA (and
fellow Clearing House customer) working together in capacity-building to
empower castañeros – the nut collectors.
Commitment to the Conservation of Natural Resources
Since 1999, Candela has represented the NGO's of the region at the National
Commission for the Environment (CONAM) in Peru . Since 2002 Candela Peru has
been a member of the Forest Stewardships Council of Latin America and part
of the committee who developed the standards for the Amazon nut as a
non-timber forest product.
In 2004 Candela renewed a five year agreement with Conservation
International to work on conservation issues in the region and Candela has
have signed an agreement with Cesvi, an Italian NGO focused on the Madre de
Dios region, working together on different research projects.

 In
the traditional press, olives are crushed. A maximum water heat of 28°C is
used to assist oil extraction earning its acclaimed status of "cold
pressed". This means Elysian Isle olive oil retains all the nutritional
values highly prized with olive oil of this caliber.
Unlike the often highly refined olive oils
found in many supermarkets, Elysian Isle olive oil is not filtered. The
slightly cloudy appearance means all the goodness and taste of the olive
fruit is captured and retained adding to the enjoyment and nutritional
richness of this spectacular olive oil.
Olive oil is best stored out of direct sunlight
and in a cool, dark place which is why Elysian Isle olive oil is presented
in stylish dark bottles. This helps deflect ultra violet rays that can
break down the oil and destroy its health-giving properties.
Olive Oil Process
- The trees are shaken at harvest time
and ripe fruit collected in a blanket under the tree.
- The olives are washed to remove
leaves.
- They are put in a mill which crushes
and grinds them into a paste.
- A chamber holds the paste while it is
gently paddled to release the oil molecules.
- The olives are then pressed in either
a centrifuge system, or in a traditional hydraulic press.
- After pressing the oil is decanted or
separated and stored in stainless steel tanks until bottling.
- The oil can be bottled by hand (if
volumes are small), using a bottling line, or contracted out to a
commercial bottling factory.
